Ingredients

1 large bok choy, sliced into individual pieces

2 Tbsp avocado or olive oil

1 knob of fresh ginger, chopped/minced

2 garlic cloves, chopped/minced

2 Tbsp water
-
1 Tbsp coconut aminos (or tamari)

A touch of toasted sesame oil
-
Sea salt
-
Chili flakes
Directions
Heat the avocado oil in a wok or sauté pan over medium-high heat.
Add the minced ginger and minced garlic, and stir for 1-2 minutes until fragrant.
Add the bok choy pieces, and use tongs to turn and stir fry the bok choy in the garlic and ginger for a few minutes.
Pour two tablespoons of water into the pan, cover it, and let cook for 2 minutes more until bok choy is vibrant green and cooked through.
Turn off the heat. Add coconut aminos, a touch of toasted sesame oil, sea salt, and chili flakes. Enjoy!
