Spicy Lemon Garlic Shrimp
1 lb jumbo shrimp
1-2 Tbsp extra-virgin olive oil
1-2 Tbsp vegan butter
3-4 garlic cloves, minced
1 tsp red chili flakes (or Trader Joe's Italian Soffrito blend)
1/2 lemon, juiced
Freshly ground pepper
Add the olive oil and vegan butter to a pan, and heat over high heat.
Add chopped garlic, and lower heat slightly. Let garlic sauté for a few minutes until fragrant.
Add the shrimp to the skillet and arrange. Season it with salt and pepper. Cook for 2 to 3 minutes until the shrimp turns pink, golden and crispy, then flip over and sear for another 2 minutes. Season this side with salt and pepper as well.
Add chili flakes and some lemon juice, and toss to combine.
Serve warm on its own and/or with veggie sides.
