Ingredients

1 head radicchio, chopped

1 small lemon, squeezed

1 Tbsp whole-grain mustard

1 Tbsp maple syrup

1 Tbsp extra-virgin olive oil

Sea salt

Freshly ground black pepper

1 cup packed fresh mint leaves
Directions
Chop radicchio into bite-size pieces.
Squeeze a small lemon or 1/2 a regular lemon into a bowl, and stir in mustard, maple syrup, and olive oil. Season with salt and pepper.
Toss radicchio and freshly chopped mint with dressing, season with additional salt and pepper if necessary, and serve.
