Ingredients

1/2 cup extra-virgin olive oil

2-3 Tbsp apple cider vinegar

1 bunch of scallions (3-5), minced

1 Tbsp dijon mustard

1 Tbsp whole grain mustard

1 Tbsp maple syrup

1 garlic clove, finely grated or minced

1/2 large lemon, juiced (important ingredient!)

Sea salt

Freshly ground pepper
Directions
Blend all ingredients in a small mixing bowl or mason jar.
Toss with any salad, and enjoy! This dressing is so light and fresh, but has sweetness from the maple syrup and bite from the scallions and mustard. You will never want to make any other dressing after trying this!
Store the remaining dressing in a mason jar in the fridge for about one week.
