Simple Fresh Herb Vinaigrette
1-2 cups fresh herbs (cilantro, basil, mint, parsley, oregano, chervil, chives, dill, lemon balm, etc.)
3/4 cup extra-virgin olive oil
2 Tbsp apple cider vinegar
2 Tbsp maple syrup or raw honey
2 tsp dijon mustard
1/2 tsp sea salt
Combine all ingredients in a blender. Blend it until the dressing has a smooth consistency.
Taste and add in more salt, acid, or sweetener if needed.
Serve on top of crunchy leafy greens, and store the remainder in a mason jar in the fridge for about one week. Shake it up again before serving!
