Sweet and Crispy Delicata Squash
2 delicata squash, halved lengthwise with seeds removed from center
1-2 Tbsp coconut oil
1-2 tsp ground cinnamon
Flaky sea salt
Preheat oven to 400F. Once both delicata squash are cut lengthwise and have all seeds removed from the center, cut each delicate half into 1/2-inch half moon pieces.
Toss delicata squash pieces with coconut oil, cinnamon, and sea salt in a mixing bowl, and make sure they are all coated well.
Add delicata squash pieces to silicone baking sheet. Roast in the oven for 15-20 minutes or until squash has softened. Flip them halfway through for even browning on both sides.
Broil at 550F for a couple of minutes at the end for added crisp.
Serve with creamy tahini dijon dressing if desired! Enjoy.
